i have some tortellini pasta.
it states that 100grams dry weight is 178 calories.
it states that 125grams when cooked becomes 190grams in weight,presumably 65grams come from the added water.?
then it indicates that 190grams of cooked pasta is 337 calories.
where do the extra calories come by adding water?
Answer:
When heated the starch granules rupture, releasing the starch in a form that’s more easily digestible. So the more you cook a starch, the higher the calories and glycemic index are. it's a very complex thing, but i hope this helps a tiny. sorry couldn't be more informative.
