Answer:
Your weight is good — maybe a tiny low, actually. So you want to eat to maintain your weight, not lose.
You might want to eat a little more for breakfast, as it is the most important meal for the day. It gets you going and you want to aim for it to get you through until lunch. Anything high in fiber and GOOD fats will help you with this. They help you feel fuller for longer. But your breakfast is not too bad at all.
Lunch needs to be a tiny more fulfilling. Your aim is to make it to the next meal without feeling hungry. The toast is a good idea for swift energy, but it's going to burn out. The peanut butter is a good idea, but it is probably more fatty than you want. I would stick to peanut butter (reduced-fat) for breakfast. For lunch, I would want more animal protein. Something easy would be a tuna melt. Take half a can of tuna and heat it up with half a slice of cheese (or a whole slice if you want). Mix it all together and make a sandwich (toast if you prefer). Use whole wheat bread. With this, you get grains, dairy, and protein from fish. To keep the bread from getting soggy, pack the tuna in a separate container.
Supper sounds delicious! Your diet sounds pretty good, just may want to add to it. Especially if you are exercising a lot. I have the ability to tell you want to lose weight, but you really do not need to at all!! Just maintain.
Answer:

but try and not have the peanut butter as that is RIDICULOUSLY fatty
try something like light cream cheese?

You definitely don't need to lose anymore weight. You can actually gain some weight if you wanted to. You will probably need a bit more calories than that.
