My daughter is severely lactose intolerant. She can only eat aged hard cheeses, because the aging process breaks down the lactose. she can not have american cheese at all.
She eats provolone, and parmesan, and romano all the time.

in the making of cheese lactose is broken down by the bacteria that form cheese. so yes some can eat cheese as there is less lactose in it but as there’s some in there still if you’re very sensitive to lactose then no you cant eat it. ideal to try and see

Personally I can't have anything which is dairy including lactic acids(I am very sensitive) whilst others I know can drink milk and eat yoghurt's and cheese
