well my gfs bday is coming up soon and i want to make her a special dinner whats a good thing (im really good at cooking) and i cant really afford to take her out to a nice restaurant :/ (its in womens health so more women read it)

I would suggest going the Italian route, Get a bottle of wine you like & enjoy with dinner. You can do traditional lasagna or manicotti, or go alfredo (add chicken/seafood/broccoli to hook it up). Ask her family what she likes ideal. For the most part these are simple & affordable. Add love to it when putting it in the oven & she'll most likely love the smell of your home cooking. Use lighting to your advantage (*candles*) & flowers, you'll have her gushing with glee : )

I created this recipe last summer, and if she likes shrimp and cream sauces, your GF's gona *LOVE* it!

Fettucine with Scampi and Orange Chiffonade Sauce

(Serves 2, copiously)

Orange Chiffonade Sauce (there will be leftovers of this part)

3 tsp cornstarch

1/2 cup water

8 ounces whipping cream

juice from 2 medium oranges

juice from 1/2 lemon (2 tablespoons plus)

1 1/2 Tbsp orange rind

1/2 tsp fresh thyme — leaves only, chopped small

1 massive clove garlic — crushed and finely minced

1 Tbsp butter

1/8 tsp salt

pinch black pepper

pinch cayenne pepper

pinch nutmeg

sprig fresh dill — chopped

2 ounces of parmigiano reggiano — grated very fine.

1/3 cup fresh basil — cut in fine chiffonade (to chiffonade basil: fold/roll fresh basil leaves stems tightly into a cylinder and cut it diagonally with a very sharp knife in very fine “slices”)

1 teaspoon per serving of orange rind — julienned *super* fine

SAUCE PREP (2 hours or less before cooking time):

mince garlic and combine with salt, pepper, cayenne, nutmeg in cream

juice oranges and lemon and combine

chop rind, thyme and dill

grate cheese

have starch and water handy

MAKE IT UP:

Mix cornstarch well with water and set aside to soak. In a small sauce pan heat sauce ingredients until simmering, then add cornstarch mixture. Mix well and reduce 5 minutes over medium heat, stirring constantly. Remove from

heat and let stand 5 minutes while slicing basil into chiffonade.

Stir in half the parmigiano and serve over spinach fettucine, topped first with basil chiffonade, then a generous central sprinkle of parmigiano, some julienned orange rind, and a bit of coarse pepper.

Tiger Prawn Scampi

1 small garlic clove, crushed

1/2 tsp Salt

1/4 tsp Dry Mustard

1/8 tsp Pepper

2 Tbsp Parsley, chopped

3 Tbsp fruity dry white wine (I used Hester Creek's Pinot Gris 2005, which got served with supper)

3 Tbsp Lemon juice

1 oz Olive oil

12 big tiger prawns

SCAMPI PREP (4 hours or less before cooking time):

Combine all but prawns in 1 quart bowl

Thaw, head, peel and vein prawns (leave tails on) and marinate prawns for two to four hours in fridge (stir occasionally).

MAKE IT UP:

Stir-fry marinated prawns in very hot wok or deep skillet with 3 tablespoons of marinade (or broil 4 inches from heat, brushing with marinade) until nearly done. Serve immediately on top edges of the orange sauce, surrounding the chiffonade/cheese/rind toppings… remnant heat will finish cooking them.

presentation is an important factor as is mod . set lighting.music and build up to relax her yet if possible surprise her at same time.

It need not cost the earth but a small present maybe tucked under a dessert dish for example or a box presented at the end of the meal with a glass of wine?

the box should contain say a half dozen red roses and a special card inside . use good paper in the box etc not just a few roses dropped din an old shoe box! you get the drift.
